I have a confession to make. I haven’t exactly been practicing what I preach as well as I should. Jump Kitchen is about a lifestyle change. Its about feeling better and eating well in the process. But its also about hard work. And sometimes at the end of a bad day I just need to eat all the cheese in sight. And eating things in moderation doesn’t mean limiting my cheese intake to only one meal a day. Sometimes that’s even hard for me!

So today I embark on a longer term journey to optimize my health. Using all the principles we cook with here at Jump Kitchen, I’ll be reporting every day on my progress, what I’m eating, and how I’m feeling. I know its going to be a struggle, but if I take it one day at a time, I can model the behavior that I hope I am teaching to all of you.

So, theres SOMETHING in my diet that is still keeping me down. My skin could be better. I’m often fatigued. So I’m going to figure out what it is. An elimination diet is the key to this, though its very restrictive, I’m sure to feel better. As you know, I’ve already been living gluten free. In addition, I’ll also be removing the following common allergens from my diet. Eggs, dairy, soy, peanuts, sugar, and I’m throwing in pork for good measure. Its not going to be easy, and I’ll report back on how its going.

Right now I eat eggs most morning for breakfast, and I try to avoid carbs in general, so I’m not certain what to replace that with. Any breakfast suggestions you may have, would be great!
